Michelin-starred pumpkin soup for Halloween !

As Halloween creeps closer and the weather turns colder, nothing tastes as good as a bowl of hot pumpkin soup. With only a couple of weeks away, things are starting to get spooky at the Boxy atelier. To unravel the secret recipe of the most hauntingly good pumpkin soup, we wore our latest winter '22 collection and snuck into the magical kitchen of the celebrity chefs Kristof and Stefan Boxy and their brilliant right hand Douglas Poelman, who also happens to be the older brother of our CEO Gaspard Poelman !

The twin brothers started a Michelin-starred restaurant in 1982. Fifteen years later they devoted themselves to their own catering service which takes care of all kinds of parties, from the food to the decoration. In 2017 Douglas Poelman joined and the triplet has been thriving ever since.

To add to their excellence and their meticulous eye for art, their atelier is actually a glass pavilion that was built by the infamous designer Maarten Van Severen who let old and new play off each other adequately and uncorruptively.

Not quite, but that's how easy they make it look ! Though the mouth-watering flavours and the unbelievable attention to detail say otherwise. But not to worry ! INGREDIENTS

PREP ± 15 MIN. COOK ± 30 MIN. 30 SERVINGS

3 peeled butternut pumpkins
10 medium onions
2 lemongrass stalks
8 Iranian lemons
100 gr. ginger
Zest of Buddha's hand (a.k.a. the fingered citron)
750 gr. yoghurt
Cilantro powder to taste
Lemon myrtle to taste
Garlic powder to taste
Cayenne pepper to taste
Salt and pepper to taste
